TOLL HOUSE HOTEL ANNOUNCES OPENING OF NEW SIGNATURE RESTAURANT AND LOUNGE, VERGE

Restaurant brings progressive craft cocktail program and artisanal cuisine to beloved Los Gatos Hotel and local community

 

LOS GATOS, Calif. (March 31, 2015) – Toll House Hotel, located in Los Gatos, will introduce its new signature restaurant VERGE Restaurant + Lounge in April 2015. The hotel’s dining space has been transformed into a lively social and culinary destination with an expanded bar, innovative dining area intermingling with lounge and dinner seating, a private dining room and outdoor courtyard seating accommodating up to 165 guests. VERGE offers an elevated, artisanal dining experience featuring contemporary Californian-fusion cuisine and a progressive craft cocktail program.

 

Inspired by its location on the verge of town, VERGE brings a new energy to the highly regarded Toll House Hotel and community of Los Gatos. The restaurant offers culinary delights that are sophisticated, locally sourced, culturally diverse, and Californian at heart. At the helm, Executive Chef Albert Nguyen-Phuoc has designed the new menu to showcase fresh and innovative Californian-fusion cuisine. With Vietnamese heritage and classic French training, his dishes are artful in presentation and eclectic in flavor.

 

“We are focusing on a contemporary Californian cuisine that is authentic in its roots and sourcing while still fresh and unique,” said Chef Albert. “Our locally-sourced produce provides a sensory experience that’s synonymous with the bounty of Northern California.”

Small Plates:

  • Wild Mushroom Cobbler – biscuit, cream, mushroom parmesan, Humbolt Fog goat cheese
  • Onion Dip – caviar, dill, house-made potato chips, truffle oil, parmesan served in an onion

 

Starters:

  • Octopus and Pork Belly – Sriracha aioli, black currant, Thai basil
  • Ahi Tuna Tartar and Shrimp Eggroll – hearts on fire, tangerine, lace edamame shoot

 

Main Plates:

  • Eggplant and Mushroom Lasagna – mushroom, eggplant, onion, gouda, peas sauce, toasted walnuts, wrapped in feuille de brick
  • Pork and Duck Burger – mac and cheese bun, fried egg, lettuce, tomato, chipotle aioli, jalapeno fries served open-faced

 

The sophisticated craft cocktail menu of more than 30 specialty drinks speaks to America’s current craft revival scene, with artisan spirits, house-made bitters and archaic syrups. Signature house-infused liquors, house-made jams, pickled items and herb garnishes complete the hand-crafted cocktail program.

Modern and spacious, VERGE’s revamped setting opens up to the main lobby and the newly enhanced courtyard, welcoming guests into the new social space from within the hotel and the surrounding area.
