TIBURON TAVERN APPOINTS NEW EXECUTIVE CHEF AND GENERAL MANAGER

Chef Tim Humphrey and General Manager, Chris Lamm to Lead Award-Winning Marin County Neighborhood Eatery

 

TIBURON, Calif. (June 30, 2014) –  Tiburon Tavern is excited to announce two new additions to its team, Executive Chef Tim Humphrey and General Manager Chris Lamm. Humphrey will extend his culinary expertise along with with his background in family farming to enhance Tiburon Tavern’s elevated comfort cuisine. In his role, Humphrey will oversee the restaurant’s culinary operations and introduce new, handcrafted dishes seasonally. Lamm brings many successful years of experience in restaurant hospitality to the destination restaurant located at The Lodge at Tiburon. In his new role, Lamm will manage the daily operations of the restaurant and bar, including the selection, development and management of the restaurant menu and mixology program.

Humphrey’s signature culinary style is a tribute to his Southern roots complimented by his abundant use of ingredients sourced from local Bay Area farms. New, farm-fresh dishes from Humphrey include:

 

  • Sweet Corn Bisque – shrimp, corn and jalapeno salad, micro cilantro
  • Watermelon Tomato Saladbasil, crudité, and pickled watermelon rind
  • CLTDungeness crab, Bibb lettuce, heirloom tomatoes, lemon aioli, ciabatta, side of house made Kennebec potato chips
  • Apple Juice-Brined Grilled Pork ChopMy Mama’s Cheese Grits, asparagus, bacon lardons, kale, whole grain mustard vinaigrette

 

Growing up in the woods of northern Florida, Humphrey was enveloped by the joy of locally grown food from a young age. At just 15 years old Humphrey held himself to the highest standards, making sure he was always the first one in and the last one out of the kitchen. Whether it was earning Michelin stars at Meadowood and Murray or representing the United States while cooking for the president of Taiwan, he is forever grateful to have been given the opportunity to share his family’s story through his culinary vision.

 

A Washington native, Lamm began his hospitality career in Las Vegas, Nevada. It was there he discovered his passion for delivering an extraordinary food and wine experience. Lamm’s subsequent pursuit of excellence led him to some of the top restaurants around the country, and the achievement of first level Court of Master Sommeliers. In 2008, Chris realized his life-long dream of living near Wine Country and the innovative culture of San Francisco and moved to the Marin County community of Mill Valley.

 

Fortunate to have crossed paths previously, Humphrey and Lamm worked together at Cavallo Point Lodge. There they established a working-relationship which will allow them to work cohesively in their new roles at Tiburon Tavern. Together, they make a dynamic team and will take their talents to new levels showcasing simple yet innovative comfort cuisine at one of Tiburon’s finest farm-to-fork establishments.
